350g pumpkin puree (homemade)
110g plain flour
35g cocoa powder
2/3 tsp bicarbonate of soda
1/3 tsp baking powder
Pinch of salt
200g dark chocolate
70g walnuts
170g sugar
125g butter
1 1/2 tsp mixed spice
Step 1
Preheat oven to 160ºC (fan). Line a 9”, 23cm square baking dish/tin with baking paper.
Step 2
Melt chocolate and butter over low heat.
Step 3
Mix flour, baking powder, bicarb, salt, mixed spice, cocoa and sugar in large bowl.
Step 4
Mix pumpkin puree with chocolate and butter mixture.
Step 5
Add wet ingredients to dry and mix (don’t over mix) to combine. Add chopped walnuts.
Step 6
Pour into tray and smooth out the top, bake for 45min. Leave in tin for 20min before placing on cooling rack.
